Good news: a great potluck dish doesn't need a complicated recipe.

These easy ideas use everyday ingredients to bring everything together.

Not sure where to start? Find the one that works for you here:

1. Crunchy Slaw That Travels Well

Bagged cabbage does most of the work, while fresh scallions and a flavorful dressing bring everything together.

What You'll Need

Approximately 6 side servings

  • 1 bag (14 oz) shredded cabbage or coleslaw mix

  • 1 cup shredded carrots, if not included in the mix

  • 3 scallions, thinly sliced

  • ⅓ cup pumpkin seeds (optional)

  • ⅓ cup Walden Farms Asian Zero Calorie Dressing & Marinade, plus more to taste

How to Make It

  1. Add the cabbage, carrots, and scallions to a large bowl.

  2. Toss gently to combine.

  3. Cover and refrigerate until you're ready to leave.

That's your prep done.

Pack separately: Keep the dressing in a sealed container and the pumpkin seeds in a small bag.

Finish on arrival: Add the dressing, toss everything together, and sprinkle the seeds on top.

2. Chopped Chickpea Salad

Need something a little heartier?

This colorful salad brings together tender chickpeas, crisp vegetables, and a sweet, tangy Honey Dijon dressing.

No stove required. Just a cutting board, a can opener, and a bowl.

What You'll Need

Approximately 6 side servings

  • 2 cans (15 oz each) chickpeas, drained and rinsed

  • 1 cucumber, diced

  • 1 bell pepper, diced

  • 1 cup cherry tomatoes, halved

  • ¼ small red onion, finely diced

  • ¼ cup fresh parsley, chopped

  • ⅓ cup Walden Farms New Recipe Low Calorie Honey Dijon Dressing, plus more to taste

How to Make It

  1. Add the chickpeas, cucumber, bell pepper, tomatoes, and onion to a large bowl.

  2. Sprinkle in the parsley and toss gently.

  3. Cover and refrigerate until it's time to go.

Not a fan of raw red onion? Try sliced scallions for a milder flavor, or leave the onion out.

Pack separately: Keep the Honey Dijon in a sealed container. If you're preparing the salad well ahead, pack the tomatoes separately too.

Finish on arrival: Pour in the dressing and toss until everything is lightly coated.

The Honey Dijon adds a sweet, tangy finish that works beautifully with the crisp vegetables and tender chickpeas.

Don't Forget These Before You Leave

The food is ready, but there's one more thing to check.

Make sure you've packed:

  • Serving utensils: A spoon or tongs so guests can help themselves.

  • Sealed dressing containers: No one wants a spill on the way.

  • Separate toppings: Keep pumpkin seeds and crackers crunchy.

  • Ingredient labels: Helpful when guests have allergies or dietary preferences.

  • A cooler or insulated bag: Use ice packs to keep chilled dishes cold during transport.

For food safety, keep perishable dishes at 40°F or below during transport. Once served, don't leave them at room temperature for more than two hours, or one hour when temperatures are above 90°F.

A little planning now makes serving much easier later.

So pick your favorite, grab what you need, and leave the complicated cooking for another day.
